The Origin of Coffee
Coffee originated in Ethiopia and has since grown into a global agricultural product enjoyed by millions every day. It thrives in tropical and subtropical regions where altitude, climate, and soil conditions work together to influence the quality, aroma, and flavor of the beans.
From the highlands of Africa to the fertile farms of Latin America and Asia, each growing region produces coffee with unique characteristics. Factors such as elevation, temperature, and harvesting methods all contribute to the final profile of the coffee, making every cup a reflection of its origin. This diversity is what makes coffee such a rich and dynamic experience.

From Bean to Cup
We import our Costa Rican coffee directly from the grower, where it is carefully cultivated under ideal conditions to ensure exceptional quality and flavor.
Every cup of coffee then goes through a detailed and carefully managed process—from planting to the final brew—where each stage plays a vital role in shaping its aroma, richness, and overall experience.

1. Planting
Coffee is planted in microlots using some of the finest coffee varieties in the world. It is grown at the right elevation and under shade to ensure optimal quality and flavor development.
We follow a 100% organic approach, using no pesticides or chemical fertilizers, to preserve the purity and integrity of every bean.

Processing
Coffee processing is divided into two methods: Washing and Fermenting, and the Honey Method. Each method plays an important role in developing the flavor, texture, and overall quality of the coffee.
3. Washing and Fermenting
In this method, the coffee cherries are pulped, and the outer layers are removed from the beans. The beans are then thoroughly washed and placed in water for fermentation, typically lasting between 24 to 48 hours.
During fermentation, any remaining pulp and impurities rise to the surface and are removed, while the natural stickiness of the beans is fully broken down. This process results in a cleaner, more refined flavor profile.

5. Roasting
Roasting is the stage where coffee develops its signature aroma and flavor. The beans are carefully heated to enhance their richness, balance acidity, and create the distinct profile of each blend.
Roasting is done according to specific preferences, allowing the level of roast to be adjusted based on the desired taste. This personalized approach ensures that each batch delivers the intended flavor profile, from lighter and more delicate notes to deeper, more robust characteristics.

7. Brewing
Coffee is prepared fresh upon request to ensure the highest level of quality and flavor. The beans are ground only at the moment the customer orders, preserving their freshness and aroma.
Each coffee variety is handled separately, with dedicated grinders used for each type to maintain the integrity and purity of the beans without any cross-mixing.
We do not use drip coffee machines or percolators. Every cup is individually ground and brewed to order, allowing for a fully personalized coffee experience.
From your choice of coffee variety to milk options—including soy, skim, almond, or regular milk—and preferred level of sweetness or syrups, every detail is customized to match your taste.

2. Harvesting
Coffee is harvested at peak ripeness to ensure optimal quality and flavor. Mechanical methods are not used; instead, trained professional pickers carefully select each cherry by hand.
This selective process ensures that only fully ripened beans are collected, preventing any unripe or green beans from being included.
During harvesting, all baskets and sacks are thoroughly washed between varieties to preserve the integrity of the beans and prevent any cross-contamination.

4. Honey Method
In the honey method, part of the natural pulp is intentionally left on the beans during drying, allowing more of the coffee’s natural sugars to be absorbed. This contributes to a sweeter and more complex flavor.
After processing, the beans are sun-dried on mesh air beds for several weeks. This controlled drying process helps preserve quality while enhancing the coffee’s body, sweetness, and overall character.

6. Packaging and Transportation
The coffee is carefully packaged in specialized bags designed to control moisture. These bags allow gases and excess moisture to escape while preventing external air, moisture, and contaminants from entering, helping preserve the freshness and quality of the beans.
This method of packaging is essential during transportation, ensuring that the coffee maintains its integrity from origin to destination.
To preserve optimal flavor, only whole coffee beans are imported, as coffee begins to oxidize shortly after being ground. This ensures that freshness and quality are maintained until the moment of preparation.
